They say that Japanese cooking is the art of subtraction. Ingredients are treated with great reverence, which means treating them simply so the ingredient's character can shine through.

But this simple cooking is one of the hardest things to achieve in the culinary world, and so, Sakana is lucky to have the skills and experience of Chef Motonori Oki at its helm.

Chef Oki

It takes year and years of training to become a true craftsman of Japanese cooking, and at the age of 16, Chef Oki uniquely began his learning from European Masters and became as competent in the skills of Japanese and European cooking. His pursuit of cooking perfection continued in many esteemed restaurants in Japan, where he grew his vast knowledge and experience in the art of Japanese cooking.

Due to his rising reputation Oki san became recognised in international chef circles and was persuaded to come to Melbourne, and join the team of a highly reputable and award wining restaurant, becoming an intricate part of the creative team.

However, Chef Oki decided to call the Sunshine Coast home, and we at Sakana have benefitted from his brilliance ever since.
